The Food and Beverage Manager is under the direct supervision of the Food & Beverage Director. The Food and Beverage Manager is responsible for administration, operation and direct management of the Food and Beverage Department.
Requires morning, afternoon, evenings and nights. Monday through Sunday.
Must have the availability to work all shifts (irregular work schedule) during normal operating hours of the property.
Request to be scheduled off for a specific day requires advance notification and approval.
Essential Duties and Responsibilities
This position includes, but is not limited to, the duties and responsibilities noted below:
Responsible for the supervision and performance of the Food and Beverage department.
Assists the Food and Beverage department and Company personnel, as necessary, to assure the successful performance of their assigned job duties.
Preparing, planning, and budgeting for Food and Beverage department.
Ensures the safety and security of employees and customers. Manager processes and programs to effectively control and reduce loss time injuries.
Responsible for recruiting, hiring, and training to maintain budgeted staffing.
Managing and developing supervisors and employees.
Delegate authority and assign responsibilities.
Evaluate and solve complex problems.
Analyze and interpret operational results.
Co-Create menus and wine list with F&B Director.
Manage cost of goods sold via inventory controls and designated budgeted levels.
Monitor and adjust performance and product offering to local competition.
Manage broad variety of tasks and deadlines.
Meet with staff as necessary.
Any other duties as assigned and/or deemed reasonable and necessary.
Authority and Supervisory Capacity
Recruits, interviews, and hires staff for the Food and Beverage Department.
Prepares work schedules for staff.
Discipline employees as necessary.
Physical Job Requirements
Must be able to move objects up to and exceeding 25lbs.
Frequent bending, turning, kneeling, and stooping.
Exposure to hot and cold temperatures and fumes.
Casino environment (exposure to cigarette, cigar and pipe smoke; bright flashing lights; loud mechanical noises and crowds).
Must be able to stand and walk for extended periods.
Knowledge of point of scale computer, and bar system and all kitchen equipment.
Knowledge of applicable sanitation regulations, health regulations, and Alcohol Beverage Control Laws.
5 years’ experience such as Restaurant Manager, Banquet and Convention Manager, Sous Chef, Food and Beverage purchasing experience, instructional skills for training with a 4-year degree in related field or equivalent work experience.
Must have valid ABLE License and any application health certifications.
Must pass pre-employment drug test.
Must have high school diploma or GED equivalent.
Must qualify and maintain a valid Cheyenne and Arapaho Gaming License.
Efficient computer and math skills.
