Assistant Food and Beverage Manager – Concho

General Description
The Assistant Food and Beverage Manager is under the direct supervision of the Food and Beverage Manager. The Assistant Food and Beverage Manager is responsible for ensuring the quality and professionalism of our food and beverage service in the restaurant, kitchen, deli, and bar by supervising our staff thereby providing an atmosphere that exceeds our guests’ expectations.
Essential Duties and Responsibilities
- Must ensure all operations are working properly and efficiently inside the entire F&B Department.
- Maintains and implements work procedures to ensure efficiency.
- Will conduct employee training in specific job functions.
- Assist in scheduling of kitchen and bar staff shifts
- Assist in ordering food supplies and kitchen equipment, as needed.
- Will assist in weekly inventory.
- Will assist in product purchasing.
- Will assist in interviewing, hiring, training and firing all F&B Staff.
- Maintaining quality standards through consistency, such as use of recipes, plate presentation, product label, date, and rebate.
- Maintaining sanitation/organization, such as supervision of cleaning crew, and responsible for maintaining organized storerooms, walk-ins, etc.
- Maintain sanitation and safety standards in the kitchen area.
- Supervise food prep and cooking.
- Check food plating and temperature.
- Establish portion sizes.
- Train kitchen staff on prep work and food plating techniques.
- Store food products in compliance with safety practices (e.g. in refrigerators).
- Will update staff members regarding new laws about the sale of liquor.
- Monitor daily stocks and perform price checks.
- Implement and enforce all F&B procedures and practices.
- Maintaining employee uniform standards
- Must work side by side with employees within all aspects of the F&B Department.
- Fill in wherever necessary within the F&B Department.
- Other duties as assigned by Food and Beverage Manager.
Work Schedule
- Requires morning, afternoon, and evening shifts. Monday through Sunday, including holidays and/or special events.
- Request to be scheduled off for a specific day requires advance notification and approval by manager
Authority & Supervisory Capacity:
- Recommend hiring and termination of staff
- Prepare works schedules for staff
- Discipline employees as necessary.
Qualification Standards
- Minimum High School education or GED or equivalent combination of training and experience with willingness to obtain training as requested.
- Must pass pre-employment drug test
- Must have a minimum of 2 years related experience and/or training or equivalent combination of education and experience.
- MS Office Tools experience; knowledge of computer systems and/or communication systems.
- Excellent verbal and written communication skills
- Must qualify and maintain a Cheyenne-Arapaho Gaming License/Permit.
- Must have reliable transportation.
Physical Job Requirements
- Sitting and standing continuously to perform job functions for a full shift with breaks.
- Requires bending, twisting, reaching, climbing, stooping, crouching, kneeling, lifting, pulling and finger dexterity.
- Move objects up to and exceeding 25lbs with reasonable accommodations.
- Casino environment (exposure to cigarette, cigar and pipe smoke; bright flashing lights; loud mechanical noises and crowds)
